Ingredients
- 2 kilograms cow feet, cleaned
- 4 Liters water
- 10 garlic cloves
- 10 grams salt
- 1 lemon
Preparation
- Place the cleaned cow feet in a large pot with 4 Liters water
- Bring to a boil and remove any foam from the surface liquid
- Reduce heat and simmer for five hours until the meat is falling off
- Add the crushed garlic cloves and salt during the last hour of cooking
- The broth should be thick and very gelatinous when the soup is finished
- Serve the hot soup in bowls with fresh lemon juice and bread
Tips
- Cleaning the feet thoroughly in cold water is essential for a clear broth
- Use a pressure cooker to reduce the cooking time to ninety minutes total
- Add the garlic at the end to maintain its sharp and fresh flavor
