Recipe for Potato and Cheese Vareniki

These dumplings are filled with a mixture of mashed potatoes and cheese then boiled.

Ingredients

Dough

  • 500 grams flour
  • 250 milliliters warm water
  • 1 egg
  • 2 grams salt

Filling

  • 500 grams potatoes, mashed
  • 200 grams farmers cheese
  • 1 onion, diced
  • 30 grams butter

Preparation

Filling

  1. Sauté the diced onion in butter then mix with mashed potatoes
  2. Stir in the cheese and season with salt and pepper then cool
  3. The filling must be firm to make the dumpling assembly much easier

Dough

  1. Mix the dough ingredients and knead until the texture is very smooth
  2. Rest the dough for thirty minutes then roll out on a floured surface
  3. Cut out circles and place a spoonful of filling in each center

Cooking

  1. Fold the dough over and pinch the edges together to seal well
  2. Boil in salted water for three minutes after they float to top
  3. Drain and serve with melted butter and some fried onion pieces on top

Tips

  • Ensure the mashed potatoes are completely cold before mixing in the cheese
  • Pinch the edges twice to make sure the dumplings do not open up
  • Serve with a dollop of sour cream for a more traditional flavor
