Recipe for Kyufta Kofta Kebab

Ingredients

  • 800 grams minced lamb
  • 4 garlic cloves, minced
  • 10 grams salt
  • 5 grams coriander
  • 5 grams cinnamon
  • 10 grams fresh parsley, chopped

Preparation

  1. Combine the minced lamb with the garlic, parsley, and all the dry spices
  2. Mix the meat by hand until the ingredients are distributed very evenly
  3. Shape the lamb into small cylinders about ten centimeters in total length
  4. Place the meat onto skewers or directly on a very hot grill surface
  5. Cook for four minutes per side until the exterior is brown and charred
  6. Serve the hot meat with flatbread and a side of sliced red onions

Tips

  • Do not overcook the lamb to ensure the center remains tender and moist
  • Use flat metal skewers to prevent the meat from spinning during the grilling
  • Serve with a yogurt based sauce to balance the warm cinnamon and spices
