- 800 grams ground beef
- 1 large onion, grated
- 10 grams salt
- 5 grams black pepper
- 5 grams cumin
- 5 grams paprika
- 30 milliliters olive oil
Preparation
- Grate the onion and squeeze out the excess liquid using a clean cloth
- Mix the ground beef with the dry onion and all the spices together
- Knead the meat for five minutes until it becomes tacky and holds shape
- Mold the beef into long cylinders around metal skewers using wet hands
- Heat the grill to 220 Celsius and cook the meat for eight minutes
- Turn the skewers frequently to ensure a charred and evenly cooked surface
Tips
- Use ground beef with twenty percent fat to keep the kebabs juicy
- Squeezing the onion juice prevents the meat from falling off the skewers
- Chill the meat mixture for thirty minutes before shaping to improve the grip
