Recipe for Grilled Sujuk Sausage
Spicy fermented sausages grilled until the skins are crispy and the centers are hot.

Ingredients
- 500 grams sujuk sausage
- 15 milliliters olive oil
- 4 pita breads
- 1 tomato
- 1 onion
Preparation
- Slice the fermented sujuk sausage into rounds about one centimeter in thickness
- Heat a grill pan or outdoor grill to a medium high temperature
- Lightly brush the sausage slices with olive oil to prevent any sticking
- Grill the rounds for three minutes per side until the edges are crispy
- Warm the pita breads on the grill during the last two minutes
- Serve the hot sausages inside the bread with sliced tomato and onion
Tips
- Sujuk has a high fat content so do not use too much oil
- Grill the sausage until the fat starts to render and turn clear
- Use a heavy weight to press the sausages for a more even char
