Dough
- 500 grams flour
- 200 milliliters water
- 1 egg
- 2 grams salt

- 300 grams ground beef
- 200 grams ground pork
- 1 onion, grated
- 5 grams salt
- 3 grams black pepper

Dough
- Mix the flour, water, egg, and salt to form a firm dough
- Knead for ten minutes then let it rest for thirty minutes total
- Roll the dough very thin on a floured work surface before cutting
Filling
- Combine the beef, pork, and grated onion with salt and black pepper
- Place a small amount of meat in the center of a dough circle
- Fold the dough over and pinch the edges to form a crescent
Boiling
- Join the two ends of the crescent to create the classic round shape
- Drop into boiling water and cook for five minutes after they float
- Serve the hot dumplings with sour cream and a splash of vinegar
Tips
- Adding a little cold water to the meat filling makes it juicier
- Freeze the dumplings on a tray before boiling to help them hold shape
