Recipe for Russian Meat Dumplings

Ingredients

Dough

  • 500 grams flour
  • 200 milliliters water
  • 1 egg
  • 2 grams salt

Filling

  • 300 grams ground beef
  • 200 grams ground pork
  • 1 onion, grated
  • 5 grams salt
  • 3 grams black pepper

Preparation

Dough

  1. Mix the flour, water, egg, and salt to form a firm dough
  2. Knead for ten minutes then let it rest for thirty minutes total
  3. Roll the dough very thin on a floured work surface before cutting

Filling

  1. Combine the beef, pork, and grated onion with salt and black pepper
  2. Place a small amount of meat in the center of a dough circle
  3. Fold the dough over and pinch the edges to form a crescent

Boiling

  1. Join the two ends of the crescent to create the classic round shape
  2. Drop into boiling water and cook for five minutes after they float
  3. Serve the hot dumplings with sour cream and a splash of vinegar

Tips

  • Adding a little cold water to the meat filling makes it juicier
  • Freeze the dumplings on a tray before boiling to help them hold shape
