Recipe for Polish Tomato Soup with Rice
A Polish soup made from chicken broth and tomatoes served with cooked white rice.

Ingredients
Soup
- 2 Liters chicken stock
- 500 grams tomato passata
- 100 milliliters heavy cream
- 10 grams sugar
- 5 grams salt
Rice
- 200 grams white rice
- 500 milliliters water
- 2 grams salt
Preparation
Rice
- Boil the water with salt and add the rice to the small saucepan
- Cover and simmer on low heat for fifteen minutes until the water is absorbed
- Let the rice rest for five minutes before fluffing it with a kitchen fork
Soup
- Heat the chicken stock and tomato passata in a large pot until boiling
- Stir in the sugar and salt then reduce the heat to a simmer
- Pour in the heavy cream and stir until the soup is a light orange
Assembly
- Place a scoop of the cooked rice in the center of each bowl
- Pour the hot tomato soup over the rice and garnish with fresh parsley
- Serve immediately while the soup and rice are still very hot for guests
Tips
- Use home made chicken stock for a much deeper and more savory flavor
- A small amount of sugar is necessary to balance the acidity of tomatoes
- Cook the rice separately to prevent it from soaking up all the soup broth
