Recipe for Hearty Garden Vegetable Soup

Ingredients

  • 2 Liters vegetable stock
  • 2 carrots
  • 2 potatoes
  • 1 zucchini
  • 100 grams green beans

Preparation

  1. Dice all the vegetables into small and uniform bite sized pieces now
  2. Sauté the onion and garlic in a large pot until they soften
  3. Add the carrots and potatoes and stir for five minutes total time
  4. Pour in the stock and tomatoes then bring to a steady boil
  5. Reduce heat and simmer for twenty minutes until all vegetables are tender
  6. Season with salt and pepper then serve the hot soup in bowls
