Recipe for Herb Roasted Potatoes

Ingredients

  • 1 kilogram potatoes
  • 60 milliliters olive oil
  • 5 grams salt
  • 10 grams fresh rosemary
  • 10 grams fresh thyme
  • 3 garlic cloves

Preparation

  1. Peel and cut the potatoes into uniform cubes about three centimeters wide
  2. Toss the potatoes with olive oil, salt, and minced herbs in bowl
  3. Spread the mixture in a single layer on a large baking sheet
  4. Add the crushed garlic cloves to the tray for extra flavor aroma
  5. Bake at 200 Celsius for thirty-five minutes until the potatoes are golden
  6. Turn the potatoes halfway through the baking time for even browning results

Tips

  • Par-boil the potatoes for five minutes before roasting for extra crispy edges
  • Do not overcrowd the pan or the potatoes will steam instead of roast
  • Use a high smoke point oil if you are roasting at higher temperatures
