Recipe for Authentic Georgian Cheese Pie

Ingredients

Dough

  • 500 grams flour
  • 300 milliliters milk
  • 7 grams yeast
  • 10 grams sugar
  • 5 grams salt

Filling

  • 300 grams mozzarella cheese
  • 300 grams feta cheese
  • 1 egg
  • 30 grams butter

Preparation

Dough

  1. Mix the flour, warm milk, yeast, sugar, and salt to form a soft dough
  2. Knead for ten minutes then let it rise for sixty minutes until doubled
  3. Punch down the dough and roll it into a circle on a floured surface

Filling

  1. Grate the mozzarella and crumble the feta then mix with one egg
  2. Place the cheese mixture in the center of the dough and fold edges
  3. Roll the filled pie flat again until it is two centimeters thick

Bake

  1. Heat a large pan and bake at 200 Celsius for fifteen minutes
  2. Brush the top with melted butter immediately after removing from the oven
  3. Cut into wedges and serve while the cheese center is still hot
