Recipe for Rich and Cheesy Ground Beef Enchiladas

Hearty enchiladas filled with seasoned ground beef and topped with a thick layer of melted cheddar.

Ingredients

Meat

  • 500g ground beef
  • 1 onion, diced
  • 10g taco seasoning
  • 100ml tomato sauce

Assembly

  • 8 flour tortillas
  • 300g cheddar cheese, shredded
  • 200ml red enchilada sauce
  • 30g jalapeños, sliced

Preparation

Cooking

  1. Brown 500g ground beef with the diced onion in a large skillet for 7 minutes
  2. Drain the excess fat and stir in the taco seasoning and 100ml tomato sauce
  3. Simmer the meat mixture for 5 minutes until the liquid is mostly absorbed

Baking

  1. Spread a thin layer of enchilada sauce in a baking dish and fill each tortilla with the beef and some cheese
  2. Roll the tortillas and arrange them in the dish then top with the remaining sauce and the rest of the cheddar
  3. Bake at 180 Celsius for 15 minutes then add jalapeño slices and bake for 5 more minutes until the cheese is melted

Tips

  • Drain the ground beef thoroughly after browning to prevent the enchiladas from becoming greasy
  • Mix a small amount of the enchilada sauce into the beef filling to keep it moist during baking
  • Allow the dish to rest for 5 minutes after baking so the sauce sets and the rolls are easier to lift
