Recipe for Spicy Shrimp Tom Yum Soup

This Thai soup is made with shrimp, mushrooms, lemongrass, and spicy chili paste in broth.

Ingredients

  • 500 milliliters chicken stock
  • 200 grams shrimp, peeled
  • 100 grams mushrooms, sliced
  • 2 stalks lemongrass
  • 30 milliliters lime juice
  • 15 milliliters fish sauce
  • 10 grams chili paste

Preparation

  1. Bring the chicken stock to a boil in a medium sized pot
  2. Add the smashed lemongrass stalks and simmer for five minutes for aroma
  3. Stir in the chili paste, mushrooms, and the peeled raw shrimp pieces
  4. Cook for three minutes until the shrimp turn pink and the mushrooms soften
  5. Remove from heat and stir in the lime juice and fish sauce
  6. Serve the hot soup in bowls and garnish with fresh cilantro leaves

Tips

  • Add the lime juice only after removing from heat to preserve flavor
  • Use fresh lemongrass instead of dried to get the most aromatic broth base
  • Adjust the amount of chili paste to control the level of spicy heat
