Recipe for Duck Breast Ramen

Meat

  • 2 duck breasts
  • 5 grams salt
  • 2 grams black pepper

Bowl

  • 300 grams ramen noodles
  • 1 Liter chicken stock
  • 30 milliliters soy sauce
  • 50 grams bok choy
  • 2 spring onions

Preparation

Duck

  1. Score the skin of the duck and season both sides with salt
  2. Sear in a cold pan skin-side down for eight minutes until crispy
  3. Flip and cook for three minutes then let the meat rest before slicing

Assembly

  1. Cook the noodles in boiling water then drain and place in bowls
  2. Heat the stock with soy sauce and pour over the noodles in bowls
  3. Add the sliced duck, steamed bok choy, and chopped spring onions

Tips

  • Starting the duck in a cold pan helps render the fat slowly
  • Slice the duck against the grain to ensure the meat is tender
  • Do not overcook the noodles as they will soften further in the broth
