Recipe for Duck Breast Ramen

- 2 duck breasts
- 5 grams salt
- 2 grams black pepper
Bowl
- 300 grams ramen noodles
- 1 Liter chicken stock
- 30 milliliters soy sauce
- 50 grams bok choy
- 2 spring onions
Preparation
Duck
- Score the skin of the duck and season both sides with salt
- Sear in a cold pan skin-side down for eight minutes until crispy
- Flip and cook for three minutes then let the meat rest before slicing
Assembly
- Cook the noodles in boiling water then drain and place in bowls
- Heat the stock with soy sauce and pour over the noodles in bowls
- Add the sliced duck, steamed bok choy, and chopped spring onions
Tips
- Starting the duck in a cold pan helps render the fat slowly
- Slice the duck against the grain to ensure the meat is tender
- Do not overcook the noodles as they will soften further in the broth
