Recipe for Polish Chicken Soup
A clear Polish soup made by simmering chicken and root vegetables for several hours.

Ingredients
- 1 whole chicken
- 3 Liters water
- 3 carrots
- 2 parsnips
- 1 leek
- 1 celery root
- 1 onion
- 10 grams salt
- 5 grams peppercorns
Preparation
- Place the chicken in a large pot and cover with 3 Liters water
- Bring to a boil and remove any foam from the surface liquid
- Add the peeled vegetables, salt, and peppercorns to the cooking pot
- Reduce heat to very low and simmer for at least three hours
- The soup should be clear and have a deep yellow color tone
- Strain the soup and serve with thin noodles and cooked carrots
Tips
- Never let the soup boil rapidly if you want the broth clear
- Burn the onion skin over a flame before adding for a gold color
- Use a mix of chicken parts to get a richer flavor base
