Recipe for Crispy Oven Baked Sweet Potato Fries
Golden and crunchy sweet potato wedges seasoned with herbs and baked to perfection.

Ingredients
Fries
- 800g sweet potatoes
- 30ml cornstarch
- 45ml olive oil
- 5g salt
- 3g paprika
- 2g garlic powder
Sauce
- 100ml mayonnaise
- 15ml sriracha
- 5ml lime juice

Prep and Bake
- Peel 800g sweet potatoes and cut them into uniform sticks about 1cm thick
- Soak the sticks in cold water for 30 minutes then pat them completely dry with a towel
- Toss the fries in 30ml cornstarch until lightly coated then add olive oil and spices
- Arrange in a single layer on a parchment-lined tray and bake at 220 Celsius for 20 to 25 minutes until edges are brown
Sauce
- Whisk 100ml mayonnaise with 15ml sriracha and 5ml lime juice until smooth
- Let the sauce chill in the refrigerator while the fries finish baking
Tips
- Soaking the sweet potatoes in water removes excess starch and helps achieve a crispier texture
- Do not overcrowd the baking sheet as the fries will steam rather than crisp up
- Add the salt only after baking to keep the fries from becoming soggy while in the oven
