Ingredients

Fries

  • 800g sweet potatoes
  • 30ml cornstarch
  • 45ml olive oil
  • 5g salt
  • 3g paprika
  • 2g garlic powder

Sauce

  • 100ml mayonnaise
  • 15ml sriracha
  • 5ml lime juice

Preparation

Prep and Bake

  1. Peel 800g sweet potatoes and cut them into uniform sticks about 1cm thick
  2. Soak the sticks in cold water for 30 minutes then pat them completely dry with a towel
  3. Toss the fries in 30ml cornstarch until lightly coated then add olive oil and spices
  4. Arrange in a single layer on a parchment-lined tray and bake at 220 Celsius for 20 to 25 minutes until edges are brown

Sauce

  1. Whisk 100ml mayonnaise with 15ml sriracha and 5ml lime juice until smooth
  2. Let the sauce chill in the refrigerator while the fries finish baking

Tips

  • Soaking the sweet potatoes in water removes excess starch and helps achieve a crispier texture
  • Do not overcrowd the baking sheet as the fries will steam rather than crisp up
  • Add the salt only after baking to keep the fries from becoming soggy while in the oven
