Recipe for Creamy Homemade Hummus

This dip consists of chickpeas, tahini, lemon juice, garlic, salt, water, and extra virgin oil.

Ingredients

  • 400 grams canned chickpeas
  • 120 milliliters tahini
  • 60 milliliters lemon juice
  • 2 garlic cloves
  • 5 grams salt
  • 30 milliliters extra virgin olive oil
  • 30 milliliters ice water
  • 2 grams paprika

Preparation

  1. Drain and rinse 400 grams chickpeas then place them in a food processor with 2 garlic cloves
  2. Pulse until the chickpeas are roughly chopped then add the tahini, lemon juice, and salt
  3. Blend for 3 minutes until the mixture is thick and relatively smooth
  4. While the processor is running, slowly drizzle in 30 milliliters of ice water
  5. Continue blending for another 2 minutes until the hummus is perfectly silky
  6. Spread on a plate and garnish with olive oil and a dusting of paprika

Tips

  • Adding ice water during the blending process is the secret to achieving a light and fluffy texture
  • For the smoothest hummus, peel the skins off the chickpeas before blending them
  • Use fresh lemon juice rather than bottled for a much brighter and cleaner acidity
