Recipe for Garden Salad with Balsamic Vinaigrette
A crisp and colorful mix of garden greens and vegetables served with a homemade balsamic dressing.

Ingredients
Salad
- 200g mixed greens
- 1 cucumber, sliced
- 200g cherry tomatoes, halved
- 1 carrot, shredded
- 50g radishes, sliced
Dressing
- 60ml extra virgin olive oil
- 30ml balsamic vinegar
- 5ml Dijon mustard
- 5g honey
- 2g salt
Preparation
Salad
- Wash the mixed greens in cold water and dry them thoroughly using a salad spinner
- Slice the cucumber and radishes into thin rounds and halve the cherry tomatoes
- Toss all the vegetables together in a large wooden bowl until well distributed
Dressing
- In a small jar, combine 60ml olive oil, 30ml vinegar, 5ml mustard, and 5g honey
- Shake the jar vigorously for 30 seconds until the oil and vinegar have emulsified into a smooth dressing
- Drizzle over the salad just before serving and toss gently to coat every leaf
Tips
- Dry the greens completely before adding dressing; any remaining water will prevent the oil from sticking
- Make the dressing in advance to allow the flavors of the mustard and balsamic to meld together
- Add the dressing only at the table to prevent the delicate lettuce leaves from wilting too quickly
