Recipe for Chinese Shrimp Fried Rice
This rice dish is stir fried with shrimp, eggs, peas, and carrots in a wok.

Ingredients
- 400 grams cooked white rice
- 200 grams shrimp, peeled
- 2 eggs
- 100 grams frozen peas and carrots
- 45 milliliters soy sauce
- 15 milliliters sesame oil
- 2 spring onions
Preparation
- Heat the sesame oil in a large wok over high heat setting
- Add the shrimp and cook for three minutes until pink then remove
- Scramble the eggs in the same wok until they are just set
- Add the cooked rice, peas, and carrots and stir fry together
- Return the shrimp to the wok and pour in the soy sauce
- Toss everything for three minutes and garnish with sliced spring onions
Tips
- Use day old cold rice to prevent the grains from becoming mushy or sticky
- High heat is essential for achieving the traditional toasted flavor of fried rice
- Pat the shrimp dry before frying to ensure they sear rather than steam
