Creamy Chicken Tikka Masala
Chicken pieces are marinated in yogurt and spices then cooked in a spiced tomato sauce.

Ingredients
Chicken
- 800 grams chicken breast, cubed
- 150 grams plain yogurt
- 15 milliliters lemon juice
- 5 grams ground turmeric
- 5 grams garam masala
Sauce
- 30 milliliters vegetable oil
- 1 onion, diced
- 3 garlic cloves, minced
- 10 grams ginger, grated
- 400 grams tomato passata
- 200 milliliters heavy cream
- 5 grams ground cumin
Preparation
Marinade
- Mix yogurt, lemon juice, and spices in a bowl then add chicken to coat
- Refrigerate the chicken for thirty minutes to allow the flavors to soak in the meat
Cooking
- Fry the chicken in oil until brown then remove and sauté the onion and aromatics
- Stir in the tomato passata and cumin then simmer the sauce for fifteen minutes
Finish
- Pour in the heavy cream and return the chicken to the pan to heat through
- Simmer for five minutes until the sauce is thick then garnish with fresh coriander
Tips
- Marinate the chicken for several hours to achieve a softer meat texture
- Searing the chicken at a high temperature adds a better charred flavor profile
- Use high fat cream to prevent the sauce from separating during the simmering
