Recipe for Rich and Cheesy Ground Beef Enchiladas
Hearty enchiladas filled with seasoned ground beef and topped with a thick layer of melted cheddar.

Ingredients
Meat
- 500g ground beef
- 1 onion, diced
- 10g taco seasoning
- 100ml tomato sauce
Assembly
- 8 flour tortillas
- 300g cheddar cheese, shredded
- 200ml red enchilada sauce
- 30g jalapeños, sliced
Preparation
Cooking
- Brown 500g ground beef with the diced onion in a large skillet for 7 minutes
- Drain the excess fat and stir in the taco seasoning and 100ml tomato sauce
- Simmer the meat mixture for 5 minutes until the liquid is mostly absorbed
Baking
- Spread a thin layer of enchilada sauce in a baking dish and fill each tortilla with the beef and some cheese
- Roll the tortillas and arrange them in the dish then top with the remaining sauce and the rest of the cheddar
- Bake at 180 Celsius for 15 minutes then add jalapeño slices and bake for 5 more minutes until the cheese is melted
Tips
- Drain the ground beef thoroughly after browning to prevent the enchiladas from becoming greasy
- Mix a small amount of the enchilada sauce into the beef filling to keep it moist during baking
- Allow the dish to rest for 5 minutes after baking so the sauce sets and the rolls are easier to lift
