Crust
- 250 grams flour
- 125 grams cold butter
- 50 grams sugar
- 1 egg
- 2 grams salt
Filling
- 500 grams pumpkin puree
- 3 large eggs
- 200 milliliters heavy cream
- 150 grams brown sugar
- 5 grams cinnamon
- 2 grams ginger
Preparation
Crust
- Mix the flour, butter, and egg to form a firm pastry dough
- Press the dough into a tin and blind bake at 180 Celsius
Filling
- Whisk the pumpkin, eggs, cream, sugar, and spices until very smooth
- Pour into the crust and bake at 170 Celsius for forty minutes
Tips
- Use cold butter for the crust to ensure it stays flaky and crisp
- Let the pie cool completely so the filling has time to set firmly
- Sift the spices into the pumpkin to avoid any small lumps in custard
