Servings: 1
Prep time: 5 minutes

Ingredients

Main Ingredients

  • 1 thick slice rustic bread (sourdough, Italian, or country loaf)
  • ½ ripe avocado
  • 2–3 cocktail or cherry tomatoes, sliced into rounds

Cheese

  • 2 tbsp feta cheese, crumbled (goat cheese can be used as an alternative)

Flavor Enhancers

  • Fresh lemon juice (from 1 wedge)
  • Sea salt, to taste
  • Freshly cracked black pepper, to taste

Optional

  • Drizzle of extra virgin olive oil
  • Pinch of red pepper flakes

Instructions

  1. Toast the Bread: Toast the bread slice until golden brown and sturdy enough to hold toppings.
    • Tip: Rub a peeled garlic clove over the hot toast for added flavor.
  2. Prepare the Avocado: Cut the avocado in half, remove the pit, and scoop out the flesh. Slice it into thin strips.
    • Tip: Fan the slices across the toast to cover it edge-to-edge.
  3. Add the Tomatoes: Layer 3–4 tomato slices over the avocado.
  4. Add the Cheese: Crumble feta over the avocado and tomatoes, focusing on edges and crevices for even distribution.
  5. Season & Serve: Squeeze fresh lemon juice over the toast, then season with sea salt and black pepper.
    • Optional: Drizzle with olive oil or sprinkle red pepper flakes for extra flavor.

Tips

  • Choose ripe, creamy avocado for easy slicing and smooth texture.
  • Use thick, crusty bread to prevent sogginess from the toppings.
  • Cherry or cocktail tomatoes provide a sweeter, juicier bite, but plum tomatoes can work in a pinch.
  • For extra crunch, toast the bread slightly longer or add seeds like pumpkin or sunflower on top
