A fresh, vibrant open-faced sandwich that balances creamy avocado, juicy tomatoes, and salty feta. Perfect for a quick breakfast, snack, or light lunch, it relies on high-quality ingredients for maximum flavor.
Servings: 1
Prep time: 5 minutes
Ingredients
Main Ingredients
- 1 thick slice rustic bread (sourdough, Italian, or country loaf)
- ½ ripe avocado
- 2–3 cocktail or cherry tomatoes, sliced into rounds
Cheese
- 2 tbsp feta cheese, crumbled (goat cheese can be used as an alternative)
Flavor Enhancers
- Fresh lemon juice (from 1 wedge)
- Sea salt, to taste
- Freshly cracked black pepper, to taste
Optional
- Drizzle of extra virgin olive oil
- Pinch of red pepper flakes
Instructions
- Toast the Bread: Toast the bread slice until golden brown and sturdy enough to hold toppings.
- Tip: Rub a peeled garlic clove over the hot toast for added flavor.
- Prepare the Avocado: Cut the avocado in half, remove the pit, and scoop out the flesh. Slice it into thin strips.
- Tip: Fan the slices across the toast to cover it edge-to-edge.
- Add the Tomatoes: Layer 3–4 tomato slices over the avocado.
- Add the Cheese: Crumble feta over the avocado and tomatoes, focusing on edges and crevices for even distribution.
- Season & Serve: Squeeze fresh lemon juice over the toast, then season with sea salt and black pepper.
- Optional: Drizzle with olive oil or sprinkle red pepper flakes for extra flavor.
Tips
- Choose ripe, creamy avocado for easy slicing and smooth texture.
- Use thick, crusty bread to prevent sogginess from the toppings.
- Cherry or cocktail tomatoes provide a sweeter, juicier bite, but plum tomatoes can work in a pinch.
- For extra crunch, toast the bread slightly longer or add seeds like pumpkin or sunflower on top
