Recipe for Pumpkin Casarecce Pasta
Pasta tubes served in a creamy sauce made from roasted pumpkin puree and parmesan cheese.

Ingredients
- 500 grams casarecce pasta
- 400 grams pumpkin puree
- 200 milliliters heavy cream
- 50 grams parmesan cheese
- 2 garlic cloves
- 30 milliliters olive oil
- 2 grams nutmeg
Preparation
- Boil the pasta in salted water until it is al dente then drain
- Sauté the garlic in oil then stir in the pumpkin puree and cream
- Add the nutmeg and parmesan cheese then toss with the cooked pasta
Tips
- Roasting your own pumpkin provides a better flavor than using canned puree
- Save a little pasta water to thin the sauce if it is too thick
- Use a short pasta shape to help catch the thick pumpkin sauce
