Recipe for Sizzling Chicken Fajitas with Onions and Peppers

Marinade
- 45ml lime juice
- 30ml olive oil
- 5g cumin
- 5g chili powder
- 15g garlic, minced

- 500g chicken breast, sliced
- 2 bell peppers, sliced
- 1 large onion, sliced
- 30ml vegetable oil
Preparation
Marinating
- Whisk together the lime juice, olive oil, cumin, chili powder, and minced garlic in a bowl
- Toss the chicken strips in the marinade and let them sit for at least 20 minutes at room temperature
Searing
- Heat 30ml oil in a heavy cast-iron skillet over very high heat until it starts to smoke
- Add the chicken and sear for 5 to 6 minutes until charred and cooked then remove from the pan
- Toss in the peppers and onions and cook for 4 minutes until tender-crisp then return the chicken to the pan to sizzle
Tips
- Slicing the chicken and vegetables into uniform strips ensures they cook at the same rate
- Use a cast-iron skillet to achieve the signature smoky char and high-heat searing characteristic of fajitas
