Recipe for Sizzling Chicken Fajitas with Onions and Peppers

Ingredients

Marinade

  • 45ml lime juice
  • 30ml olive oil
  • 5g cumin
  • 5g chili powder
  • 15g garlic, minced

  • 500g chicken breast, sliced
  • 2 bell peppers, sliced
  • 1 large onion, sliced
  • 30ml vegetable oil

Preparation

Marinating

  1. Whisk together the lime juice, olive oil, cumin, chili powder, and minced garlic in a bowl
  2. Toss the chicken strips in the marinade and let them sit for at least 20 minutes at room temperature

Searing

  1. Heat 30ml oil in a heavy cast-iron skillet over very high heat until it starts to smoke
  2. Add the chicken and sear for 5 to 6 minutes until charred and cooked then remove from the pan
  3. Toss in the peppers and onions and cook for 4 minutes until tender-crisp then return the chicken to the pan to sizzle
