Ingredients
- 800 grams minced lamb
- 1 onion, grated
- 5 grams cumin
- 5 grams coriander
- 5 grams cinnamon
- 10 grams fresh parsley
- 5 grams salt
Preparation
- Grate the onion and squeeze out the excess liquid using a cloth
- Mix the minced lamb with the dry onion, parsley, and all spices
- Shape the meat into small oval patties using your wet hands carefully
- Heat the grill to a high temperature and lightly oil the grates
- Grill the kofta for four minutes per side until they are charred
- Serve the hot meat with rice and a fresh salad of tomatoes
Tips
- Use a high fat lamb mince to ensure the kofta stays juicy
- Do not press the meat while grilling to keep the juices inside
- Serve with a side of tahini sauce to complement the lamb flavor
