Recipe for Salmon Sashimi

Fresh raw salmon sliced into thin pieces and served with soy sauce and wasabi.

Ingredients

  • 300 grams fresh raw salmon
  • 30 milliliters soy sauce
  • 10 grams wasabi paste
  • 20 grams pickled ginger
  • 1 radish

Preparation

  1. Ensure the salmon is sushi grade and kept very cold until serving
  2. Slice the salmon against the grain into pieces five millimeters thick
  3. Grate the radish into long thin strips to use as a base
  4. Arrange the salmon slices on a plate over the shredded radish strips
  5. Serve with small bowls of soy sauce and wasabi for dipping meat
  6. Add a small pile of pickled ginger to the side of plate

Tips

  • Use a very sharp knife to get clean and even salmon slices
  • Keep the fish on ice while you are preparing the other ingredients
  • Dipping only the edge of the fish preserves the delicate salmon flavor
