- 7g dried yeast
- 5g salt
- 10ml olive oil
Filling
- 150g cooked ham, diced
- 200g mozzarella cheese, shredded
- 100g ricotta cheese
- 50g parmesan cheese
- 2g dried oregano
Preparation
Dough Preparation
- Mix 250g flour, 7g yeast, and 5g salt in a bowl then add 150ml warm water and 10ml olive oil
- Knead the dough for 10 minutes until smooth and elastic then let it rise in a warm place for 30 minutes
- Divide the dough into two balls and roll each into a circle approximately 25cm in diameter
Filling and Baking
- Spread 50g ricotta on one half of each circle then layer with 75g ham and 100g mozzarella
- Fold the empty half over the filling and crimp the edges tightly with a fork or your fingers to seal
- Brush the top with a little olive oil and bake in a preheated oven at 220 Celsius for 15 to 18 minutes until golden brown
Tips
- Ensure the ricotta is well-drained before adding it to the filling to prevent the dough from becoming soggy during baking
- Use a pizza stone or a preheated baking tray to achieve a crispier bottom crust
- Let the calzone rest for 5 minutes after taking it out of the oven so the cheese sets slightly and doesn’t run out when cut
