Recipe for Grilled Spiced Lamb Kofta

Ingredients

  • 800 grams minced lamb
  • 1 onion, grated
  • 5 grams cumin
  • 5 grams coriander
  • 5 grams cinnamon
  • 10 grams fresh parsley
  • 5 grams salt

Preparation

  1. Grate the onion and squeeze out the excess liquid using a cloth
  2. Mix the minced lamb with the dry onion, parsley, and all spices
  3. Shape the meat into small oval patties using your wet hands carefully
  4. Heat the grill to a high temperature and lightly oil the grates
  5. Grill the kofta for four minutes per side until they are charred
  6. Serve the hot meat with rice and a fresh salad of tomatoes

Tips

  • Use a high fat lamb mince to ensure the kofta stays juicy
  • Do not press the meat while grilling to keep the juices inside
  • Serve with a side of tahini sauce to complement the lamb flavor
