Recipe for Spicy Shrimp Tom Yum Soup
This Thai soup is made with shrimp, mushrooms, lemongrass, and spicy chili paste in broth.

Ingredients
- 500 milliliters chicken stock
- 200 grams shrimp, peeled
- 100 grams mushrooms, sliced
- 2 stalks lemongrass
- 30 milliliters lime juice
- 15 milliliters fish sauce
- 10 grams chili paste
Preparation
- Bring the chicken stock to a boil in a medium sized pot
- Add the smashed lemongrass stalks and simmer for five minutes for aroma
- Stir in the chili paste, mushrooms, and the peeled raw shrimp pieces
- Cook for three minutes until the shrimp turn pink and the mushrooms soften
- Remove from heat and stir in the lime juice and fish sauce
- Serve the hot soup in bowls and garnish with fresh cilantro leaves
Tips
- Add the lime juice only after removing from heat to preserve flavor
- Use fresh lemongrass instead of dried to get the most aromatic broth base
- Adjust the amount of chili paste to control the level of spicy heat
