Recipe for Chinese Shrimp Fried Rice

This rice dish is stir fried with shrimp, eggs, peas, and carrots in a wok.

Ingredients

  • 400 grams cooked white rice
  • 200 grams shrimp, peeled
  • 2 eggs
  • 100 grams frozen peas and carrots
  • 45 milliliters soy sauce
  • 15 milliliters sesame oil
  • 2 spring onions

Preparation

  1. Heat the sesame oil in a large wok over high heat setting
  2. Add the shrimp and cook for three minutes until pink then remove
  3. Scramble the eggs in the same wok until they are just set
  4. Add the cooked rice, peas, and carrots and stir fry together
  5. Return the shrimp to the wok and pour in the soy sauce
  6. Toss everything for three minutes and garnish with sliced spring onions

Tips

  • Use day old cold rice to prevent the grains from becoming mushy or sticky
  • High heat is essential for achieving the traditional toasted flavor of fried rice
  • Pat the shrimp dry before frying to ensure they sear rather than steam
