Recipe for Fresh Shrimp Ceviche

Ingredients
- 500 grams raw shrimp, peeled
- 150 milliliters lime juice
- 50 milliliters lemon juice
- 1 red onion, diced
- 1 cucumber, diced
- 1 jalapeno, minced
- 10 grams fresh cilantro
- 2 grams salt
Preparation
- Cut the raw shrimp into small bite sized pieces and place in bowl
- Pour the lime and lemon juices over the shrimp until fully covered
- Refrigerate for twenty minutes until the shrimp turns pink and firm
- Stir in the diced onion, cucumber, jalapeno, and chopped fresh cilantro
- Season with salt and toss the mixture to combine all the flavors
- Serve chilled in small glass bowls with corn tortilla chips on side
Tips
- Use the freshest shrimp available since the citrus juice cooks the seafood protein
- Do not marinate the shrimp for over one hour or they become tough
- Serve immediately after mixing the vegetables to maintain a crisp and fresh texture
