Fruit
- 1 pineapple
- 1 mango
- 1 cucumber
- 1 jicama
- 2 apples
Dressing
- 50 grams peanuts
- 50 grams palm sugar
- 2 red chilies
- 15 milliliters tamarind juice
- 2 grams salt
Preparation
Fruit
- Peel and slice all the fruits and vegetables into bite-sized pieces
- Place the fruit in a large bowl and chill in the refrigerator
Dressing
- Toast the peanuts then grind with chilies, sugar, and salt in mortar
- Stir in the tamarind juice until a thick and spicy sauce forms
- Pour the dressing over the chilled fruit and toss well before serving
Tips
- Use firm and slightly underripe fruits to get a better crunch texture
- Adjust the number of chilies to control the level of spicy heat
- Add a splash of water to the dressing if it is thick
