Recipe for Marinated Ramen Egg

These eggs are boiled until soft and soaked in a soy and ginger liquid.

Ingredients

  • 4 large eggs
  • 100 milliliters soy sauce
  • 50 milliliters mirin
  • 10 grams ginger, sliced
  • 1 garlic clove
  • 1 Liter water

Preparation

  1. Boil 1 Liter of water and carefully lower the eggs into the pot
  2. Cook for exactly six minutes then transfer to a bowl of ice water
  3. Peel the eggs gently once they are completely cold to the touch
  4. Mix the soy sauce, mirin, ginger, and garlic in a small container
  5. Place the eggs in the liquid and soak for at least four hours
  6. Remove the eggs from the marinade and slice in half before serving

Tips

  • Use a small bag for marinating to ensure the eggs are fully submerged
  • Prick the large end of the egg before boiling to prevent cracking
  • The longer you soak the eggs the saltier and darker they will become
