Recipe for Chicken and Cheese Quesadilla

A simple meal made with flour tortillas, cooked chicken, and melted cheese folded and toasted.

Ingredients

  • 2 large flour tortillas
  • 200 grams cooked chicken, shredded
  • 150 grams cheddar cheese, shredded
  • 30 milliliters vegetable oil
  • 2 grams chili powder

Preparation

  1. Season the shredded chicken with chili powder in a small bowl
  2. Place one tortilla in a large pan over medium heat with a little oil
  3. Spread half the cheese and all the chicken over the surface
  4. Top with the remaining cheese and the second tortilla then press down
  5. Cook for three minutes per side until the cheese is completely melted
  6. Remove from the pan and slice into wedges before serving with salsa

Tips

  • Use a mix of different cheeses to get both flavor and a good stretch
  • Cook over medium heat to avoid burning the tortilla before the cheese melts
  • Serve with a side of sour cream or guacamole for a cooler finish
