Recipe for Traditional Polish Glazed Donuts
This Polish dessert is made from a fried yeast dough filled with jam and glazed.

Ingredients
Dough
- 500 grams flour
- 250 milliliters milk
- 50 grams sugar
- 7 grams yeast
- 3 egg yolks
- 50 grams butter
- 15 milliliters spirit
Filling
200 grams plum jam
Glaze
- 200 grams powdered sugar
- 30 milliliters hot water
- 10 grams orange peel
Preparation
Dough
- Mix the dough ingredients and let it rise for ninety minutes
- Cut out circles and let them rise for another thirty minutes
Frying
- Fry the donuts at 170 Celsius for three minutes per side
- Drain on paper towels and let the donuts cool for ten minutes
Finish
- Inject the plum jam into the side and dip the top in glaze
- Sprinkle with orange peel and let the sugar glaze set before serving
Tips
- Adding a tablespoon of spirit to the dough prevents oil absorption
- The oil must be exactly 170 Celsius to cook the center properly
- Do not overfill the donuts with jam to prevent the sides from bursting
