Recipe for Spiced Pumpkin Pie

Ingredients

Crust

  • 250 grams flour
  • 125 grams cold butter
  • 50 grams sugar
  • 1 egg
  • 2 grams salt

Filling

  • 500 grams pumpkin puree
  • 3 large eggs
  • 200 milliliters heavy cream
  • 150 grams brown sugar
  • 5 grams cinnamon
  • 2 grams ginger

Preparation

Crust

  1. Mix the flour, butter, and egg to form a firm pastry dough
  2. Press the dough into a tin and blind bake at 180 Celsius

Filling

  1. Whisk the pumpkin, eggs, cream, sugar, and spices until very smooth
  2. Pour into the crust and bake at 170 Celsius for forty minutes

Tips

  • Use cold butter for the crust to ensure it stays flaky and crisp
  • Let the pie cool completely so the filling has time to set firmly
  • Sift the spices into the pumpkin to avoid any small lumps in custard
