Recipe for Pumpkin Casarecce Pasta

Pasta tubes served in a creamy sauce made from roasted pumpkin puree and parmesan cheese.

Ingredients

  • 500 grams casarecce pasta
  • 400 grams pumpkin puree
  • 200 milliliters heavy cream
  • 50 grams parmesan cheese
  • 2 garlic cloves
  • 30 milliliters olive oil
  • 2 grams nutmeg

Preparation

  1. Boil the pasta in salted water until it is al dente then drain
  2. Sauté the garlic in oil then stir in the pumpkin puree and cream
  3. Add the nutmeg and parmesan cheese then toss with the cooked pasta

Tips

  • Roasting your own pumpkin provides a better flavor than using canned puree
  • Save a little pasta water to thin the sauce if it is too thick
  • Use a short pasta shape to help catch the thick pumpkin sauce
