Recipe for Plum Butter Jam

A thick jam made by slow cooking ripe plums with sugar and ground cinnamon spices.

Ingredients

  • 2 kilograms plums
  • 500 grams sugar
  • 10 milliliters vinegar
  • 5 grams cinnamon
  • 2 grams ground cloves

Preparation

  1. Wash the plums and remove pits then place them in a large pot
  2. Stir in the sugar, vinegar, and spices and cook over very low heat
  3. Simmer for five hours without stirring until the mixture is dark and thick

Tips

  • Do not stir the plum butter during the first hours of cooking
  • Adding a little vinegar helps to preserve the acidity of the plums
  • Use very ripe plums for the best natural sweetness and deep color
