Preparation

  1. Sauté the diced onion and garlic in oil then add cubed potatoes
  2. Pour in the vegetable stock and simmer for twenty minutes until soft
  3. Blend the soup until smooth then stir in the heavy cream and salt

  • Reserve a few potato cubes before blending to add texture to soup
  • Garnish with crispy bacon or fresh chives for a salty flavor contrast
