  1. Bring the water, milk, and salt to a boil in a large saucepan
  2. Gradually whisk in the cornmeal and simmer for twenty minutes while stirring
  3. Stir in the butter and grated parmesan cheese until the mixture is creamy

Tips

  • Whisking constantly during the first minutes prevents the cornmeal from clumping
  • Use a combination of milk and water to achieve a richer taste
  • If the polenta becomes too thick add a little warm water to loosen
