Recipe for Spanish Spicy Potatoes
These Spanish potatoes are fried until crispy and served with a spicy tomato sauce.

Ingredients
Potatoes
- 1 kilogram potatoes
- 500 milliliters vegetable oil
- 5 grams salt
Sauce
- 30 milliliters olive oil
- 5 grams flour
- 10 grams paprika
- 200 milliliters chicken stock
- 2 grams chili flakes
Preparation
Potatoes
- Peel and cut the potatoes into three centimeter cubes then boil for five minutes
- Drain and dry the potatoes before frying them in the hot vegetable oil
- Fry until the cubes are very crispy and brown then drain on paper
Sauce
- Heat olive oil and stir in flour and paprika for one minute
- Whisk in the chicken stock and chili flakes until the sauce is thick
- Simmer for five minutes then let the spicy sauce cool to room temperature
Finish
- Place the crispy potatoes in a bowl and pour the spicy sauce over them
- Serve immediately while the potatoes are still crunchy and the sauce is warm
Tips
- Par-boiling the potatoes before frying ensures the centers are soft and the outsides crispy
- Use authentic Spanish smoked paprika to get the correct earthy and deep red color
- Serve with a side of garlic mayonnaise to balance the heat of the chili
