Recipe for Polish Crepes with Sweet Cheese

Batter

  • 250 grams flour
  • 500 milliliters milk
  • 2 eggs
  • 30 milliliters vegetable oil
  • 2 grams salt

Filling

  • 500 grams quark cheese
  • 50 grams sugar
  • 1 egg yolk
  • 5 milliliters vanilla extract

Preparation

Cooking

  1. Whisk the batter ingredients until smooth and let it rest for twenty minutes
  2. Fry thin pancakes in a hot pan for one minute on each side until gold

Assembly

  1. Mix the cheese with sugar and yolk then spread over pancakes and fold them
  2. Fry the filled crepes in butter for two minutes until they are hot and crispy

Tips

  • Use a non-stick pan to ensure the crepes are easy to flip without any tearing
  • Do not overfill the crepes as the cheese might leak out during the final frying
  • Serve with a dollop of sour cream and fresh berries for a traditional finish
