Ingredients
- 400 grams canned chickpeas
- 120 milliliters tahini
- 60 milliliters lemon juice
- 2 garlic cloves
- 5 grams salt
- 30 milliliters extra virgin olive oil
- 30 milliliters ice water
- 2 grams paprika
Preparation
- Drain and rinse 400 grams chickpeas then place them in a food processor with 2 garlic cloves
- Pulse until the chickpeas are roughly chopped then add the tahini, lemon juice, and salt
- Blend for 3 minutes until the mixture is thick and relatively smooth
- While the processor is running, slowly drizzle in 30 milliliters of ice water
- Continue blending for another 2 minutes until the hummus is perfectly silky
- Spread on a plate and garnish with olive oil and a dusting of paprika
Tips
- Adding ice water during the blending process is the secret to achieving a light and fluffy texture
- For the smoothest hummus, peel the skins off the chickpeas before blending them
- Use fresh lemon juice rather than bottled for a much brighter and cleaner acidity
