Recipe for Greek Pork Gyros with Tzatziki
This Greek wrap consists of marinated pork, pita bread, tomatoes, onions, and a garlic yogurt sauce.

Ingredients
Meat
- 1 kilogram pork neck, sliced
- 60 milliliters olive oil
- 15 milliliters red wine vinegar
- 10 grams dried oregano
- 5 grams garlic powder
Sauce
- 250 grams Greek yogurt
- 1 cucumber, grated
- 2 garlic cloves, minced
- 15 milliliters lemon juice
Assembly
- 4 pita breads
- 1 tomato, sliced
- 1 red onion, sliced
Preparation
Meat
- Mix the pork slices with olive oil, vinegar, and spices
- Let the meat marinate at room temperature for at least 30 minutes
- Grate the cucumber and squeeze out every drop of water using a kitchen towel
Sauce
- Mix the dry cucumber with yogurt, minced garlic, and lemon juice
- Refrigerate the sauce until needed for assembly
Cooking
- Sear the pork in a very hot pan for 8 minutes until charred and crispy
- Warm the pitas and fill each with a generous portion of meat, sauce, tomato, and onion
- Wrap tightly in parchment paper and serve immediately
Tips
- Pork neck is the best cut because the fat keeps the meat juicy at high heat
- The more water you remove from the cucumber, the thicker and better your sauce will be
- For an authentic touch, add a few seasoned fries inside the wrap before rolling
