  • 10 grams dried oregano
  • 5 grams garlic powder

Sauce

  • 250 grams Greek yogurt
  • 1 cucumber, grated
  • 2 garlic cloves, minced
  • 15 milliliters lemon juice

Assembly

  • 4 pita breads
  • 1 tomato, sliced
  • 1 red onion, sliced

Preparation

Meat

  1. Mix the pork slices with olive oil, vinegar, and spices
  2. Let the meat marinate at room temperature for at least 30 minutes
  3. Grate the cucumber and squeeze out every drop of water using a kitchen towel

Sauce

  1. Mix the dry cucumber with yogurt, minced garlic, and lemon juice
  2. Refrigerate the sauce until needed for assembly

Cooking

  1. Sear the pork in a very hot pan for 8 minutes until charred and crispy
  2. Warm the pitas and fill each with a generous portion of meat, sauce, tomato, and onion
  3. Wrap tightly in parchment paper and serve immediately

Tips

  • Pork neck is the best cut because the fat keeps the meat juicy at high heat
  • The more water you remove from the cucumber, the thicker and better your sauce will be
  • For an authentic touch, add a few seasoned fries inside the wrap before rolling
