Bruschetta Avocado Toast

Avocado Toast Bruschetta Recipe

A quick trio of avocado toasts with fresh toppings. Easy to assemble, minimal prep.

Ingredients

Base for All Three

  • Crusty bread slices
  • Olive oil

Classic Tomato Bruschetta

  • 2–3 tomatoes, diced
  • 1 small garlic clove, minced
  • 6–8 basil leaves, chopped
  • 1–2 Tbsp olive oil
  • ½ tsp balsamic vinegar (optional)
  • Salt & pepper

Cucumber & Greens Avocado Toast

  • 1 ripe avocado
  • Lemon juice
  • Salt & pepper
  • English cucumber, thin ribbons
  • Baby arugula or microgreens
  • Olive oil
  • Flaky salt

Radish & Pepper Avocado Toast

  • 1 ripe avocado
  • Radishes, very thinly sliced
  • Black pepper
  • Flaky salt
  • Optional: small drizzle of olive oil or chili oil

Instructions

  1. Toast the Bread:
    Brush slices with olive oil. Toast or grill until crisp.
  2. Tomato Topping:
    Mix tomatoes, garlic, basil, olive oil, and optional balsamic. Season with salt and pepper. Set aside.
  3. Avocado Mash:
    Mash avocado with lemon juice, salt, and pepper.
  4. Assemble – Tomato Version:
    Spoon the tomato mix over the toasted bread.
  5. Assemble – Cucumber & Greens:
    Spread avocado mash, top with cucumber ribbons and greens. Finish with olive oil and flaky salt.
  6. Assemble – Radish & Pepper:
    Spread avocado mash, add radish slices, then sprinkle pepper and flaky salt. Add optional drizzle of olive oil or chili oil.

Tips

  • Build each toast right before serving to keep the bread crisp.
  • If using juicy tomatoes, drain lightly to avoid soggy toast.
  • A vegetable peeler makes fast cucumber ribbons with no fuss.
